Smokey Chipotle

Meatloaf


2 Eggs
1/3 cup Hickory flavor BBQ sauce
2 cloves Garlic, minced
2 Chipotle Chilies in Adobo Sauce, minced
2 tbsp. Adobo Sauce
1 tsp. Kosher Salt
1 tsp. Coarse Black Pepper
1/2 tsp. Celery Salt
1/2 tsp. Ground Cumin
1 tbsp. Worcestershire Sauce
1 Onion, chopped
1/2 cup Dry Oatmeal
2 lbs. Lean Ground Beef
2 tbsp. Hickory flavor BBQ sauce
Preheat oven to 350 degrees. Spray 9x5 loaf pan with cooking spray. Beat eggs in large mixing bowl until smooth, then whisk in 1/3 cup bbq sauce, garlic, chipotle chilies, adobo sauce, kosher salt, pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. Mix in onion, oatmeal, and ground beef with hands until evenly blended. Pack mix into prepared pan. Brush top of meatloaf with 2 more tbsp. bbq sauce. Bake in preheated oven until no longer pink in middle, about 1 hr. An instant read thermometer into center should read at least 160 degrees.
